Method

Chicken Preparation

  1. 1

    Marinate the Chicken

In a bowl, combine the buttermilk with a pinch of salt and black pepper. Add the boneless chicken breasts, ensuring they are fully submerged. Cover and refrigerate for at least 1 hour, or overnight for best results.

  2. 2

    Prepare the Breading

In a separate bowl, mix the all-purpose flour, cornstarch, baking powder, salt, black pepper, garlic powder, and onion powder. Set aside.

  3. 3

    Heat the Oil

In a large skillet or deep frying pan, pour in the vegetable oil and heat over medium-high heat until it reaches 350°F (175°C).

  4. 4

    Bread the Chicken

Remove the chicken from the buttermilk, allowing excess to drip off. Dredge each breast in the flour mixture, pressing firmly to adhere. Shake off any excess flour.

  5. 5

    Fry the Chicken

Carefully place the breaded chicken breasts into the hot oil. Fry for about 4-5 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F or 75°C). Remove and drain on paper towels.

Gravy Preparation

  1. 6

    Make the Roux

In a saucepan, melt the butter over medium heat. Once melted, whisk in the all-purpose flour and cook for 2-3 minutes until it turns a light golden color, stirring constantly.

  2. 7

    Add Broth and Milk

Gradually whisk in the chicken broth and milk, ensuring there are no lumps. Continue to cook, stirring frequently, until the gravy thickens (about 5-7 minutes).

  3. 8

    Season the Gravy

Add salt and black pepper to taste. Remove from heat and set aside.

Sides Preparation

  1. 9

    Cook the Eggs

In a non-stick skillet, fry the eggs to your preferred doneness (sunny-side up, over easy, etc.). Season with salt and pepper.

  2. 10

    Prepare the Potatoes

In another pan, cook the home potatoes or hash browns until golden and crispy, seasoning with salt and pepper to taste.

  3. 11

    Toast the Bread

Toast the slices of bread until golden brown.
