Prepare the Chicken
In a large bowl, combine flour, cornstarch, baking powder, salt, black pepper, and cayenne pepper. Mix well.

Coat the Chicken
In a separate bowl, whisk together the eggs and buttermilk. Dip each chicken breast into the egg mixture, then dredge in the flour mixture until fully coated.

Fry the Chicken
Heat vegetable oil in a deep skillet over medium-high heat. Once hot, carefully add the coated chicken breasts. Fry for 6-8 minutes per side or until golden brown and cooked through. Remove and drain on paper towels.

Prepare the Waffle Batter
In a large mixing bowl, whisk together the flour, baking powder, sugar, and salt. In another bowl, beat the eggs, then mix in the buttermilk and melted butter.

Combine the Mixtures
Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; some lumps are fine.

Cook the Waffles
Preheat a waffle iron according to the manufacturer's instructions. Pour an appropriate amount of batter onto the hot waffle iron and cook until golden brown, about 4-5 minutes. Repeat with remaining batter.
Country Gravy

Cook the Sausage
In a medium saucepan, cook the sausage over medium heat until browned and crumbly, about 5-7 minutes.

Make the Roux
Sprinkle the flour over the cooked sausage and stir to combine. Cook for 1-2 minutes to form a roux.

Add Milk and Season
Slowly pour in the milk while continuously stirring to avoid lumps. Cook until the gravy thickens, about 5-8 minutes. Add salt and black pepper to taste.
