Preheat the Oven
Preheat your oven to 450°F (230°C).

Mix Dry Ingredients
In a large bowl, combine the all-purpose flour, baking powder, baking soda, and salt.

Cut in Butter
Add the cold unsalted butter, cut into small pieces, into the flour mixture. Use a pastry cutter or your fingers to mix until it resembles coarse crumbs.

Add Buttermilk
Pour in the buttermilk and stir gently until just combined. Do not overmix.

Shape Biscuits
Turn the dough onto a floured surface, gently pat down to about 1-inch thick, and cut out biscuits using a round cutter.

Bake
Place biscuits on a baking sheet and bake for 12-15 minutes or until golden brown.
Country Gravy

Cook Sausage
In a skillet, cook the sausage over medium heat until browned and crumbled. Drain excess fat if necessary.

Make Roux
Sprinkle the flour over the cooked sausage and stir well. Cook for 1-2 minutes to form a roux.

Add Milk
Gradually whisk in the milk and continue stirring until the gravy thickens. Season with black pepper and salt to taste.

If using whole potatoes, peel and dice them into small cubes. If using frozen hash browns, prepare according to package instructions.
