Prepare the Asparagus
Trim the tough ends of the asparagus and rinse them under cold water. Pat them dry with a paper towel.

Cook the Asparagus
Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the asparagus and sauté for 5-7 minutes until tender but still crisp. Season with salt and black pepper. Remove from heat.

Prepare the Toasted Sunflower Seeds
In a dry skillet, toast the sunflower seeds over medium heat, stirring frequently until golden brown and fragrant, about 3-5 minutes.

Assemble the Dish
On a plate, arrange the sautéed asparagus. Cut the soft-boiled eggs in half and place them on top of the asparagus. Sprinkle with toasted sunflower seeds and crumble the Spenwood cheese over the dish. Drizzle with the remaining olive oil and season with additional salt and pepper if desired.
