    Trim and cut

    Pat the steak dry with paper towels. Trim excess fat or silver skin. Cut the steak across the grain into 1- to 1 1/4-inch bite-sized cubes so they cook quickly and remain tender.

Seasoning & Marinade

    Season and marinate briefly

    In a medium bowl combine 2 tbs olive oil, 1 tbs soy sauce, 1 tsp Worcestershire sauce, minced garlic, smoked paprika, 1 1/2 tsp kosher salt (reserve remaining salt), and the black pepper. Add the steak cubes and toss to coat thoroughly. Let rest at room temperature for 10–15 minutes (or refrigerate up to 30 minutes) to let flavors penetrate. Remove from fridge 20 minutes before cooking if chilled.

Cooking & Finishing

    Preheat pan

    Heat a large heavy skillet (cast iron preferred) over high heat until very hot, about 3–5 minutes. Add a thin film of neutral oil if pan is dry (not in ingredient list because marinade contains oil).

    Sear in batches

    Work in a single layer so pieces sear rather than steam. Add half the steak bites to the hot pan and let them sear without moving for 1 1/2–2 minutes to develop a dark crust. Toss or flip and sear the other side another 1–2 minutes for medium-rare to medium (adjust time for desired doneness). Remove to a plate and repeat with remaining steak bites.

    Baste with butter and herbs

    Reduce heat to medium. Return all steak bites to the pan. Add 2 tbs unsalted butter and the thyme leaves. As the butter melts, tilt the pan slightly and spoon the butter over the steak bites repeatedly for 30–60 seconds to glaze and add flavor. Taste and sprinkle the remaining reserved kosher salt (about 1 1/2 tsp) as needed.

    Rest and serve

    Remove steak bites from the pan and let rest for 2–3 minutes to redistribute juices. Transfer to a serving platter, garnish with chopped parsley and serve with lemon wedges if using. Adjust seasoning to taste and serve immediately.
