Base Ice Cream Custard

Warm dairy
In a medium saucepan, combine whole milk, heavy cream, and 2 tablespoons granulated sugar. Warm over medium heat until it just begins to steam and small bubbles form at the edges (do not boil), about 5–7 minutes.

Temper yolks
Whisk the 3 egg yolks in a heatproof bowl until smooth. Slowly pour about 1/2 cup of the warm milk mixture into the yolks while whisking constantly to temper. Then pour the tempered yolks back into the saucepan with the remaining milk mixture.

Cook custard
Cook over low–medium heat, stirring constantly with a wooden spoon or silicone spatula, until the mixture thickens enough to coat the back of a spoon and reaches about 170–175°F (77–80°C), about 3–5 minutes. Do not boil.

Strain and cool
Remove from heat and strain the custard through a fine-mesh sieve into a clean bowl to remove any cooked egg bits. Stir in 1 teaspoon vanilla extract. Let cool at room temperature for 15 minutes, then cover and chill in the refrigerator until fully cold, at least 2 hours or overnight.
Sour Orange Syrup (Flavor & Acid)

Prepare syrup
While the custard cools (or ahead of time), combine 1 cup fresh orange juice, 1 tablespoon fresh lime juice, 3 tablespoons granulated sugar, 1 tablespoon orange zest, and 1 teaspoon fine sea salt in a small saucepan. Warm gently over low heat, stirring, until the sugar dissolves and the mixture is fragrant, about 3–4 minutes. Do not reduce significantly; just combine and meld flavors.

Cool syrup
Remove from heat and let syrup cool to room temperature, then chill in the refrigerator until cold. Taste and adjust: the syrup should be noticeably bright and slightly tart — increase lime by up to 1/2 tablespoon if more bite is desired.

Incorporate syrup into custard
When custard is cold, stir the chilled sour orange syrup into the custard base. Stir thoroughly until fully combined. This creates the creamsicle-flavored ice cream base.
Churn & Assemble with Canned Fruit

Churn ice cream
Pour the combined custard and sour orange mixture into your ice cream maker and churn according to manufacturer instructions until it reaches a soft-serve consistency, typically 20–30 minutes.

Prepare fruit
While churning, drain the canned mandarin segments and pineapple tidbits well on paper towels so excess syrup is removed. Roughly chop the pineapple tidbits into smaller bite-sized pieces if desired.

Fold in fruit
When the churned ice cream is nearly finished (soft-set), gently fold in the drained mandarin segments, chopped pineapple, and halved maraschino cherries so fruit is dispersed but not completely crushed. Reserve a few segments/halves for topping if desired.

Layer and harden
Transfer the ice cream into a freezer-safe container. If you want visible 'fruit in the can' pockets, press a layer of crushed cookies into the bottom, add half the ice cream, scatter more fruit, then add the remaining ice cream and top with the reserved fruit and extra cookie crumbs. Cover and freeze until firm, at least 4 hours (preferably overnight).

Serve
Scoop the frozen creamsicle ice cream into bowls or cones. Finish with a sprinkle of crushed cookies and a little extra orange zest for brightness.
