    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut them into thin shoestring fries, about 1/8 inch thick.

    Soak the Fries

    Place the cut fries in a bowl of cold water and soak for at least 30 minutes to remove excess starch. Drain and pat them dry with a kitchen towel.

    Heat the Oil

    In a deep pot or fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Carefully add the dried fries to the hot oil in batches. Fry until golden brown and crispy, about 4-5 minutes per batch. Use a slotted spoon to remove the fries and drain them on paper towels.

    Season with Truffle Oil and Parmesan

    While the fries are still hot, drizzle them with truffle oil and toss well to coat. Sprinkle with grated Parmesan cheese, salt, and freshly ground black pepper to taste.

    Serve

    Serve immediately while hot and crispy, garnished with additional Parmesan if desired.
