Shrimp Enchiladas Recipe
Farm-raised white shrimp, stacked with fresh blue corn tortillas. Smothered with melted cheese and our red chile cream sauce. Served with rice and calabacitas. Garnished with lettuce, onion, and tomato.

Prepare the Enchiladas
Preheat your oven to 350°F (175°C). In a large baking dish, spread a bit of red chile cream sauce on the bottom. Take a blue corn tortilla, fill it with a portion of the shrimp mixture and a sprinkle of cheese, then roll it up and place seam-side down in the baking dish. Repeat with remaining tortillas.

Add Sauce and Cheese
Once all enchiladas are in the baking dish, pour the remaining red chile cream sauce over the top and sprinkle with the remaining shredded cheese.

Prepare Sides
While the enchiladas are baking, prepare the rice and calabacitas according to package instructions. Chop lettuce, onion, and tomato for garnish.

Serve
Once the enchiladas are done, remove from the oven and let cool for a few minutes. Serve hot, garnished with lettuce, onion, and tomato, alongside the rice and calabacitas.
