Roasting the Agave
Preheat your oven to 200°C (392°F). Cut the Espadin agave hearts into quarters and place them in a roasting pan. Roast for about 8 hours until they are soft and caramelized.

Crushing the Agave
Once roasted, let the agave cool. Crush the agave hearts using a traditional tahona or a mechanical crusher to extract the juice.

Fermentation
Transfer the extracted juice to a fermentation vessel. Add the yeast and stir well. Cover the vessel with a cloth and let it ferment at room temperature for about 5-7 days, or until bubbling slows down.

Distillation
After fermentation is complete, distill the liquid twice in a pot still to achieve the desired purity and flavor profile.

Aging (optional)
For a more complex flavor, transfer the distillate to oak barrels and let it age for at least 3 months.
