1. Cook the Bacon

In a skillet over medium heat, cook the bacon until crisp. Remove and drain on paper towels.

2. Prepare the Chicken

Butterfly the chicken breasts by slicing them horizontally, but not completely through. Season with salt and black pepper.

3. Cook the Chicken

In the same skillet, add olive oil and heat over medium-high. Add the butterflied chicken breasts and cook for about 6-7 minutes on each side until fully cooked and golden brown.

4. Add Cheese and Green Chile

In the last minute of cooking, place the cheddar cheese slices on top of the chicken and add chopped green chile. Cover the skillet to melt the cheese.

5. Assemble the Sandwich

Toast the brioche buns lightly. On the bottom half of each bun, place the chicken with melted cheese and green chile, followed by bacon. Top with the other half of the bun.
