Cooking Instructions
- 1
Marinate the Chicken
In a bowl, combine the olive oil, minced garlic, cumin powder, smoked paprika, oregano, lime juice, salt, and black pepper. Add the chicken thighs to the bowl, ensuring they are well coated in the marinade. Cover and let marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.
- 2
Cook the Chicken
Heat a skillet over medium-high heat. Remove the chicken from the marinade and place it in the skillet. Cook for about 6-7 minutes on each side, or until the chicken is cooked through and has a nice golden brown color. Use a meat thermometer to ensure the internal temperature reaches 165°F (75°C).
- 3
Prepare the Tortillas
While the chicken is cooking, warm the corn tortillas in a separate pan over low heat for about 30 seconds on each side until slightly toasted.
- 4
Assemble the Dish
Once the chicken is cooked, allow it to rest for a few minutes before slicing it into strips. To assemble, place a few strips of chicken on each tortilla, top with diced avocado and chopped cilantro. Serve immediately with lime wedges on the side.
