    Prepare the buffalo patties

    In a mixing bowl, combine ground buffalo meat, salt, black pepper, and garlic powder. Mix until just combined, then form into two thick patties, each about 4 oz.

    Grill the patties

    Preheat your grill to medium-high heat. Lightly brush the grill grates with olive oil. Place the buffalo patties on the grill and cook for about 4-5 minutes on each side, or until they reach an internal temperature of 160°F (71°C).

    Prepare the chiles

    While the burgers are grilling, roast the whole green chiles on the grill until charred and blistered, about 5-7 minutes, turning occasionally. Remove from the grill and let them cool slightly. Peel off the skins and set aside.

    Assemble the burgers

    Once the patties are cooked, place each patty on a brioche bun. Top with a roasted green chile and the top half of the bun. Serve immediately.
