Cooking Directions

  1. 1

    Prepare the Beef Patty

In a mixing bowl, combine the ground beef, red chile powder, salt, and black pepper. Mix until just combined, then form into two thick patties (8 oz each).

  2. 2

    Cook the Bacon

In a skillet over medium heat, cook the bacon slices until crispy. Remove and drain on paper towels.

  3. 3

    Grill the Burgers

Preheat a grill to high heat. Grill the beef patties for about 4-5 minutes on each side for medium doneness, or until your desired doneness is reached. During the last minute of cooking, place the bleu cheese on top of each patty to melt.

  4. 4

    Prepare the Buns

While the burgers are grilling, slice the brioche buns and toast them lightly on the grill or in a toaster until golden brown.

  5. 5

    Assemble the Burger

On the bottom half of each toasted bun, place the grilled beef patty with melted bleu cheese. Top with sliced hatch green chiles and two slices of crispy bacon. Close with the top half of the bun.
