    Prepare the Ribeye

    Season the ribeye steak generously with salt and pepper on both sides. Let it sit at room temperature for about 30 minutes.

    Cook the Ribeye

    In a large skillet, heat the olive oil over medium-high heat. Once hot, add the ribeye steak and sear for about 4-5 minutes on each side for medium-rare, or until your desired doneness. Add a tablespoon of butter and minced garlic in the last minute of cooking, basting the steak with the melted butter.

    Prepare the Mashed Potatoes

    While the ribeye is cooking, boil the potatoes in salted water until fork-tender. Drain and mash them with butter, salt, and a splash of cream or milk until smooth.

    Sauté the Vegetables

    In another pan, heat a tablespoon of olive oil over medium heat. Add the seasonal vegetables and sauté until tender, about 5-7 minutes. Season with salt and pepper to taste.

    Plate the Dish

    Slice the ribeye steak and serve it alongside the creamy mashed potatoes and sautéed vegetables. Drizzle the red chile jus over the top for added flavor.
