    Cook Quinoa

    Rinse 1 cup of quinoa under cold water. In a medium saucepan, combine quinoa with 2 cups of water. Bring to a boil, reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed. Fluff with a fork and let it cool.

    Prepare Zucchini

    Wash and grate the zucchini using a box grater. Place the grated zucchini in a clean kitchen towel and squeeze out excess moisture.

    Chop Fresh Herbs

    Finely chop fresh parsley or chives, and set aside.

Mixing and Cooking

    Combine Ingredients

    In a large mixing bowl, combine the cooked quinoa, grated zucchini, eggs, all-purpose flour, grated cheese, garlic powder, salt, and black pepper. Mix until well combined.

    Form Fritters

    Using your hands, shape the mixture into small patties (about 2-3 inches in diameter) and place them on a plate.

    In a large skillet, heat 3 tablespoons of olive oil over medium heat. Add the fritters in batches (do not overcrowd the pan) and cook for 3-4 minutes on each side until golden brown and crispy.
