Preparing the Fries

Cut the Potatoes
Wash and peel the russet potatoes. Cut them into uniform sticks about 1/4 inch thick.

Soak the Potatoes
Soak the cut potatoes in cold water for at least 30 minutes to remove excess starch.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Drain the soaked potatoes and pat them dry with paper towels. Fry them in batches for about 5-7 minutes or until golden brown and crispy. Remove and drain on paper towels, then season with salt.

Season the Steak
Pat the ribeye steaks dry with paper towels. Season both sides generously with salt and black pepper.

Heat the Pan
In a large skillet over medium-high heat, add olive oil. Once the oil is hot, place the steaks in the pan.

Rest the Steak
Remove the steaks from the pan and let them rest for 5 minutes before slicing.
Making the Garlic Aioli

Prepare the Garlic
Mince the garlic cloves finely.

Mix the Aioli
In a small bowl, combine mayonnaise, minced garlic, lemon juice, and salt. Mix until smooth and well combined.
