Marinating the Steak

In a bowl, combine olive oil, lime juice, chili powder, cumin, garlic powder, salt, and black pepper.

Place the flank steak in a resealable plastic bag or shallow dish. Pour the marinade over the steak, ensuring it is well-coated. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.

Slice the bell peppers and onion into thin strips.

Cook the Vegetables
In a large skillet over medium heat, add a tablespoon of olive oil. Once hot, add the sliced bell peppers and onion. Sauté for about 5-7 minutes until the vegetables are tender and slightly caramelized. Remove from skillet and set aside.

In the same skillet, increase the heat to high. Remove the steak from the marinade and discard the marinade. Cook the steak for about 4-5 minutes per side for medium-rare, or until desired doneness is achieved. Use a meat thermometer to check for an internal temperature of 130-135°F (54-57°C) for medium-rare.

Warm the flour tortillas in a dry skillet or microwave. Serve the steak and vegetable mixture on tortillas with sour cream, shredded cheese, and guacamole as toppings.
