Method

Cooking the Pasta

    Boil Water

    In a large pot, bring salted water to a boil.

    Cook Pasta

    Add pasta to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.

    Drain Pasta

    Once cooked, drain the pasta, reserving about 1 cup of the pasta water for the sauce.

Preparing the Vegetables

    Sauté Vegetables

    In a large skillet, heat olive oil over medium heat. Add bell peppers, zucchini, carrots, and broccoli. Sauté for about 5-7 minutes until the vegetables are tender.

    Add Spinach and Tomatoes

    Stir in the spinach and cherry tomatoes, cooking for an additional 2-3 minutes until the spinach wilts and tomatoes soften.

Making the Garlic Sauce

    Add Garlic

    Push the vegetables to the side of the skillet and add minced garlic. Sauté for about 1 minute until fragrant but not burnt.

    Season and Mix

    Stir the garlic into the vegetables and add salt, black pepper, and red pepper flakes. Mix well.

Combining Everything

    Combine Pasta and Sauce

    Add the drained pasta to the skillet with the vegetables. Toss everything together, adding reserved pasta water a little at a time until the desired consistency is reached.

    Add Cheese and Basil

    Remove from heat and stir in grated Parmesan cheese and chopped fresh basil. Mix until everything is well combined.
