Preparation of Turkey

Prepare the Turkey
Preheat your oven to 325°F (165°C). Rinse the turkey inside and out under cold water and pat dry with paper towels.

Roasting
Place the turkey breast side up on a roasting rack in a large roasting pan. Roast in the preheated oven for about 13-15 minutes per pound, until the internal temperature reaches 165°F (74°C) in the thickest part of the breast.

Resting
Once done, remove the turkey from the oven and let it rest for at least 20-30 minutes before carving.
Preparation of White Gravy

Make the Gravy
After removing the turkey from the roasting pan, pour the drippings into a measuring cup and let it settle. Skim off excess fat if necessary.

Whisking Flour
In a saucepan over medium heat, add the drippings and whisk in the flour. Cook, stirring constantly, for about 2-3 minutes until the mixture is golden brown.

Adding Milk
Gradually whisk in the milk until the gravy is smooth. Continue cooking while stirring until it thickens, about 5-7 minutes.

Seasoning the Gravy
Season the gravy with salt and black pepper to taste. Serve hot over carved turkey.
