Prepare the Meat
Preheat your oven to 350°F (175°C). In a large bowl, combine the beef roast or meatloaf mix with salt, black pepper, garlic powder, onion powder, eggs, breadcrumbs, and milk. Mix thoroughly until all ingredients are well incorporated.

Shape the Meat
If using ground beef for meatloaf, transfer the mixture to a loaf pan, or shape it into a loaf and place it on a baking sheet. If using a beef roast, place it in a roasting pan.

Bake the Meat
For meatloaf, bake for about 1 hour or until the internal temperature reaches 160°F (70°C). For beef roast, cook until the internal temperature reaches your desired doneness, typically around 135°F (57°C) for medium rare to 160°F (70°C) for well done.

Add Broth
Slowly add the beef broth to the roux, whisking continuously to prevent lumps. Continue to cook, stirring frequently, until the gravy thickens, about 5-10 minutes.

Season the Gravy
Add salt and black pepper to taste, stirring to combine. If the gravy is too thick, you can thin it out with additional broth or water.

Once the meat is cooked, let it rest for 10 minutes before slicing. Serve the sliced roast beef or meatloaf with a generous ladle of brown gravy over the top.
