    Prepare the Marinade

    In a small bowl, combine olive oil (4 tbs), lemon juice (2 tbs), minced garlic (2 cloves), salt (1 tsp), and black pepper (1 tsp). Mix well.

    Marinate the Salmon

    Place the salmon fillets in a shallow dish and pour the marinade over them. Let them marinate for at least 30 minutes in the refrigerator.

    Prepare the Rice

    In a pot, combine long-grain rice (2 cups), water (4 cups), and salt (1 tsp). Bring to a boil, then reduce to a simmer and cover. Cook for about 18-20 minutes until the rice is tender and the water is absorbed.

Cooking the Vegetables

    Chop the Vegetables

    Chop the zucchini (2), bell pepper (1), and carrots (2) into bite-sized pieces.

    Sauté the Vegetables

    In a large skillet, heat olive oil (2 tbs) over medium heat. Add the chopped vegetables, herbs (1 tsp), salt, and black pepper to taste. Cook for about 8-10 minutes until the vegetables are tender but still crisp.

Grilling the Salmon

    Preheat the Grill

    Preheat your grill to medium-high heat.

    Grill the Salmon

    Remove the salmon from the marinade and place it on the grill. Grill for about 4-5 minutes on each side, or until the salmon is cooked through and flakes easily with a fork.

Serving

    Plate the Dish

    Once the salmon is done grilling, plate it alongside the sautéed vegetables and rice. Serve immediately.
