    Prepare the Pickles

    Drain the dill pickle chips thoroughly and pat them dry with paper towels to remove excess moisture.

    Mix the Dry Ingredients

    In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, garlic powder, onion powder, cayenne pepper, salt, and black pepper. Mix well until all the dry ingredients are evenly blended.

    Add Sparkling Water

    Slowly pour in the cold sparkling water to the dry ingredients while stirring. Mix until you achieve a smooth batter. The batter should be thick enough to coat the back of a spoon.

Frying

    Heat the Oil

    In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of batter into it; if it sizzles immediately, it’s ready.

    Coat the Pickles

    Dunk each pickle chip into the batter, ensuring it is fully coated. Allow any excess batter to drip off.

    Fry the Pickles

    Carefully place the coated pickle chips into the hot oil, frying them in batches to avoid overcrowding. Fry for about 2-3 minutes or until they are golden brown and crispy.

    Drain and Serve

    Use a slotted spoon to remove the fried pickles from the oil and place them on a plate lined with paper towels to drain excess oil. Serve immediately with ranch dressing or your favorite dipping sauce.
