Method

Catfish Preparation

  1. 1

    Marinate the Catfish

In a bowl, pour the buttermilk over the catfish fillets and let them soak for at least 30 minutes in the refrigerator.

  2. 2

    Prepare the Coating

In a shallow dish, combine cornmeal, flour, paprika, garlic powder, onion powder, salt, and black pepper. Mix well.

  3. 3

    Heat the Oil

In a large skillet, heat the cooking oil over medium-high heat until it reaches 350°F (175°C).

  4. 4

    Coat the Catfish

Remove the catfish fillets from the buttermilk, allowing excess liquid to drip off. Dredge each fillet in the cornmeal mixture, ensuring an even coating.

  5. 5

    Fry the Catfish

Carefully place the coated catfish fillets into the hot oil. Fry for 4-5 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Vegetable Preparation

  1. 6

    Prepare Mixed Vegetables

In a large pot, bring water to a boil. Add the mixed seasonal vegetables and cook for about 3-5 minutes until tender but still crisp. Drain and set aside.

  2. 7

    Season the Vegetables

In the same pot, heat olive oil over medium heat, add the cooked vegetables, and toss with salt and black pepper to taste. Cook for an additional 2 minutes.
