In a large mixing bowl, whisk together the all-purpose flour, salt, sugar, and instant yeast until combined.

Form the Dough
Pour the wet mixture into the dry ingredients and stir until a rough dough forms. Knead the dough on a floured surface for about 8-10 minutes until smooth.

First Rise
Place the dough in a greased bowl, cover with plastic wrap, and let it rise in a warm place for about 1 hour or until doubled in size.

Prepare the Butter
While the dough is rising, take the cold butter and place it between two sheets of parchment paper. Use a rolling pin to pound it into a rectangle that is approximately 1/2 inch thick. Chill in the refrigerator.

Roll out the Dough
After the dough has risen, roll it out on a lightly floured surface into a rectangle that is about 1/2 inch thick.

Roll the dough out again into a rectangle and fold it into thirds, similar to folding a letter. Wrap in plastic and refrigerate for 30 minutes.

Repeat the rolling and folding process two more times, chilling for 30 minutes between each fold.
Shaping the Croissants

Roll and Cut
After completing the folds, roll the dough into a large rectangle, about 1/4 inch thick. Cut it into triangles.

Starting from the base of each triangle, roll it up tightly towards the tip. Place on a baking sheet lined with parchment paper.

Cover the shaped croissants with a kitchen towel and let them rise for about 1 hour in a warm place, until puffy.
