Prepare the Chicken
Start by cooking the chicken breast. In a skillet, heat 1 tablespoon of olive oil over medium heat. Season the chicken breasts with salt, pepper, cumin, and chili powder. Cook for about 6-7 minutes on each side until fully cooked. Remove from heat and let it rest for a few minutes before slicing it into thin strips.

Sauté the Vegetables
In the same skillet, add the remaining tablespoon of olive oil. Add the sliced bell pepper and onion, sautéing for about 5-6 minutes until they are soft and slightly caramelized. Remove from heat.

Assemble the Quesadilla
On a clean skillet or griddle, lay down one tortilla. On half of the tortilla, layer some of the cooked chicken, sautéed bell pepper and onion, and a generous amount of shredded cheese. Fold the tortilla over to cover the filling.

Cook the Quesadilla
Cook the quesadilla over medium heat for about 2-3 minutes on each side, or until the tortilla is golden brown and the cheese has melted. Repeat the process for the remaining tortillas and filling.

Serve and Garnish
Once cooked, remove the quesadillas from the skillet and let them cool for a minute. Cut them into wedges and serve with sour cream, salsa, and a sprinkle of fresh cilantro on top.
