Preparation of Salmon

    Marinate the Salmon

    In a small bowl, mix together olive oil, lemon juice, minced garlic (smash and chop), salt, and black pepper. Place the salmon fillets in a shallow dish and pour the marinade over them. Let them marinate for at least 30 minutes.

    Preheat the Grill

    While the salmon is marinating, preheat your grill to medium-high heat.

Cooking the Salmon

    Grill the Salmon

    Once the grill is preheated, place the marinated salmon fillets on the grill. Cook for about 6-8 minutes on one side, then carefully flip and grill for another 4-6 minutes, or until the salmon is cooked through and has nice grill marks.

Preparation of Vegetables

    Prepare Vegetables

    While the salmon is grilling, wash and slice the zucchini, bell pepper, and carrot into thin strips.

    Sauté the Vegetables

    In a skillet, heat olive oil over medium heat. Add the sliced vegetables, season with salt and black pepper, and sauté for about 5-7 minutes until tender and slightly charred.

Serving

    Once the salmon and vegetables are cooked, plate the grilled salmon filets alongside the sautéed vegetables. Serve immediately.
