Calamari Preparation

Prepare the ingredients
Rinse the calamari rings under cold water and pat them dry with paper towels to remove excess moisture.

Mix dry ingredients
In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, garlic powder, and paprika. Mix well.

Coat the calamari
Dredge the calamari rings in the flour mixture until fully coated. Shake off excess flour.

Heat the oil
In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the calamari
Carefully add the coated calamari to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 2-3 minutes or until golden brown and crispy.

Drain
Using a slotted spoon, remove the calamari from the oil and transfer them to a paper towel-lined plate to drain excess oil.

Combine sauce ingredients
Stir in the canned crushed tomatoes, dried oregano, dried basil, salt, black pepper, and sugar. Mix well.

Simmer the sauce
Bring the sauce to a gentle simmer. Reduce the heat to low and let it cook for about 15-20 minutes, stirring occasionally.
