Prepare the Pork
Begin by preheating your oven to 375°F (190°C). Trim any excess fat from the pork tenderloin and slice it into 1-inch thick medallions.

Season the Meat
Season the pork medallions with salt, black pepper, and garlic powder on both sides.

Bread the Pork
Dredge each pork medallion in flour, shaking off the excess. Dip it in the beaten egg, and then coat it with bread crumbs, pressing gently to adhere.

Fry the Pork
In a large skillet, heat the vegetable oil over medium-high heat. Once hot, add the breaded pork medallions. Fry for about 3-4 minutes on each side until golden brown and cooked through. Transfer to a paper towel-lined plate to drain excess oil.

Toast the Buns
While the pork is frying, toast the buns in the oven until lightly golden.

Wash and dry the lettuce. Slice the tomato into thick rounds.

On the bottom half of each toasted bun, place a layer of lettuce, followed by a pork medallion. Top with a slice of tomato and cover with the top half of the bun.
