Sausage Preparation

    Cook the Sausages

    Preheat your grill or skillet over medium heat. Grill or pan-fry the sausages for 12-15 minutes, turning occasionally, until they are browned and cooked through. Ensure they reach an internal temperature of 160°F.

Haus-made Kraut

    Prepare the Kraut

    Finely shred the green cabbage and grate the carrot. In a large bowl, combine the cabbage, carrot, salt, and caraway seeds. Mix well and let it sit for about 10 minutes to allow the cabbage to release some moisture.

    Ferment the Kraut

    Add the apple cider vinegar and sugar to the cabbage mixture. Mix thoroughly and place in a clean jar or container. Press down firmly to pack it tightly. Leave it at room temperature for 1-2 days to ferment, then store in the refrigerator.

Fries Preparation

    Cut the Potatoes

    Wash and peel the potatoes. Cut them into thin strips or wedges, depending on your preference for fries.

    Fry the Potatoes

    In a deep pot, heat the oil over medium-high heat. Once the oil is hot, carefully add the potato strips in batches. Fry until golden brown, about 4-5 minutes per batch. Remove with a slotted spoon and drain on paper towels. Season with salt to taste.

Assembly

    Place each grilled sausage into a bun. Top generously with haus-made kraut. Serve with a side of crispy fries.
