Pretzel Dough Preparation

    Activate Yeast

    In a small bowl, combine warm water (1.5 cups) and granulated sugar (1 tbsp). Sprinkle the active dry yeast (1 tbsp) over the top and let it sit for about 5-10 minutes, until it becomes frothy.

    Mix Dry Ingredients

    In a large mixing bowl, whisk together all-purpose flour (4 cups) and salt (1 tsp) until well combined.

    Combine Ingredients

    Once the yeast has activated, pour the yeast mixture into the flour mixture. Stir until a dough begins to form.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 5-7 minutes until the dough is smooth and elastic.

    Let the Dough Rise

    Place the kneaded dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour, or until it has doubled in size.

Shaping and Boiling Pretzels

    Preheat Oven

    Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Shape Pretzels

    After the dough has risen, punch it down and divide it into 12 equal pieces. Roll each piece into a long rope (about 12-14 inches), then shape it into a pretzel.

    Boil Pretzels

    In a large pot, bring 10 cups of water to a boil and add the baking soda (1 cup). Carefully drop the shaped pretzels into the boiling water, cooking for about 30 seconds on each side. Remove with a slotted spoon and place on the prepared baking sheet.

    Sprinkle the tops of the pretzels with coarse sea salt (1 tsp) before baking.

    While the pretzels are baking, mix granulated sugar (1 cup) and ground cinnamon (2 tbsp) in a small bowl.

    Once the pretzels are out of the oven, immediately brush them with melted butter (optional) and then coat them in the cinnamon sugar mixture.

    In small bowls, serve chocolate sauce (1 cup) and caramel sauce (1 cup) alongside the cinnamon sugar pretzels.
