Veggie Spaetzle Recipe
Spaetzles (our German style pasta) with sautéed mushrooms, onions, bell peppers, Roma tomatoes, artichokes and fresh spinach in a garlic white wine butter sauce topped with Asiago cheese. Add your choice of meat for $6.

Make the Spaetzle Dough
In a mixing bowl, combine the all-purpose flour and salt. In a separate bowl, whisk together the eggs and milk. Gradually add the egg mixture to the flour while stirring to create a thick batter.

Cook the Spaetzle
Bring a large pot of salted water to a boil. Using a spaetzle maker or a colander with large holes, press the batter into the boiling water. Cook until the spaetzle float to the surface, about 2-3 minutes. Remove with a slotted spoon and set aside.

Sauté Vegetables
In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1 minute until fragrant. Add the diced onions, bell peppers, and sliced mushrooms. Cook for about 5-7 minutes until softened.

Add Tomatoes and Artichokes
Stir in the diced Roma tomatoes and chopped artichoke hearts. Cook for an additional 3-4 minutes until the tomatoes start to break down.

Incorporate Spinach
Add the fresh spinach to the skillet and cook until just wilted, about 2 minutes. Season with salt and pepper to taste.
Combining Ingredients

Combine Spaetzle and Sauce
Add the cooked spaetzle to the skillet with the sautéed vegetables. Pour in the white wine and toss everything gently to combine. Allow to simmer for 2-3 minutes so the flavors meld together.

Serve with Cheese
Remove from heat and sprinkle the grated Asiago cheese over the top. Serve immediately, adding sliced cooked chicken or sausage if desired.
