Preparation of Spiced Aioli

Make the Aioli
In a medium bowl, combine mayonnaise, minced garlic, lemon juice, paprika, salt, and black pepper. Mix well until smooth and set aside.
Assembling the Melt

Layer the Ingredients
Take two slices of sourdough bread and spread a generous amount of the spiced aioli on one side of each slice. On the aioli side of one slice, layer the roast turkey, crumbled bacon, American cheese, and Muenster cheese. Top with the second slice of sourdough, aioli side down.
Grilling the Melt

Grill the Sandwich
In a skillet over medium heat, melt 1 tablespoon of butter. Once melted, place the assembled sandwich in the skillet. Grill for about 3-4 minutes on one side, or until golden brown. Carefully flip the sandwich, adding the remaining tablespoon of butter to the skillet. Grill the other side for another 3-4 minutes until the cheese is melted and the bread is golden.

Serve
Once the sandwich is grilled to perfection, remove it from the skillet, slice it in half, and serve warm with extra spiced aioli on the side.
