Method

Preparation

  1. 1

    Chop the Vegetables

Dice the ripe tomatoes, onion, and garlic cloves into small pieces for even cooking.

Cooking

  1. 2

    Sauté the Aromatics

In a large pot, heat the olive oil over medium heat. Add the diced onion and garlic, and sauté until the onion becomes translucent, about 5 minutes.

  2. 3

    Cook the Tomatoes

Add the diced tomatoes to the pot and cook for another 10 minutes, stirring occasionally until the tomatoes break down.

  3. 4

    Add Broth and Seasonings

Pour in the vegetable broth, then add salt, black pepper, dried basil, and sugar. Stir to combine and bring to a boil.

  4. 5

    Simmer the Soup

Reduce the heat to low and let the soup simmer for 20-25 minutes, allowing the flavors to meld together.

Finishing

  1. 6

    Blend the Soup

Use an immersion blender to puree the soup until smooth. Alternatively, blend in batches using a countertop blender.

  2. 7

    Add Cream

Stir in the heavy cream into the blended soup until well combined. Adjust seasoning if necessary.

  3. 8

    Garnish and Serve

Ladle the soup into bowls and garnish with fresh basil leaves before serving.
