Method

Preparing the Vegetables

  1. 1

    Prep the Corn

Husk the corn on the cob and remove any silk. Set aside.

  2. 2

    Chop the Vegetables

Slice the bell peppers into strips, chop the red onion into wedges, and cut the zucchini into thick rounds.

Making the Marinade

  1. 3

    Combine Ingredients

In a large bowl, whisk together the olive oil, balsamic vinegar, garlic powder, smoked paprika, salt, black pepper, and honey until well combined.

  2. 4

    Marinate the Vegetables

Add the prepared corn, bell peppers, red onion, and zucchini to the bowl with the marinade. Toss well to coat all vegetables evenly. Let them marinate for at least 30 minutes.

Grilling the Vegetables

  1. 5

    Preheat the Grill

Preheat your grill to medium-high heat.

  2. 6

    Grill the Corn

Place the corn directly on the grill grates and grill for about 10-12 minutes, turning occasionally until charred and tender.

  3. 7

    Grill the Other Vegetables

Add the marinated bell peppers, red onion, and zucchini to the grill. Grill for about 5-7 minutes, turning halfway through, until they are tender and have grill marks.

Serving

  1. 8

    Plate the Dish

Remove the grilled vegetables from the grill and transfer them to a serving platter. Garnish with freshly chopped parsley and serve with lemon wedges on the side.
