Prepare the Pork
Cut the pork loin into strips about 1 inch wide.

Bread the Pork
Coat each pork strip first in flour, then dip in the egg, and finally coat with breadcrumbs. Make sure they're fully covered.

Heat Oil
In a large skillet, heat vegetable oil over medium-high heat until shimmering.

Fry the Schnitzels
Fry the breaded pork strips in batches until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.

Make the Roux
Sprinkle flour over the sautéed vegetables and stir for about 1 minute to form a roux.

Add Liquid Ingredients
Gradually whisk in beef broth and soy sauce, bringing the mixture to a simmer.

Finish the Gravy
Stir in Dijon mustard and let the gravy thicken for about 5 minutes. For the Bier Cheese Sauce, add cream cheese, cheddar cheese, and beer, stirring until smooth and melted.

Cook the frozen French fries according to package instructions until crispy and golden.
