Pickled Red Cabbage

Red Potatoes with Bacon Jam and Cheese

Rouladen Preparation

    Prepare the Beef

    Lay the beef flank steak flat on a clean surface. Use a meat mallet to pound it to about 1/4-inch thickness.

    Fill and Roll

    Spread German mustard evenly over the surface of the beef. Lay bacon strips, pickles, and sliced onions on top. Sprinkle with salt and pepper. Starting from one end, roll the beef tightly into a cylinder. Secure with kitchen twine or toothpicks.

    Sear the Rouladen

    In a large skillet, heat olive oil over medium-high heat. Once hot, add the rouladen and sear on all sides until browned. Remove and set aside.

    Make the Sauce

    In the same skillet, add beef broth and bay leaves. Bring to a simmer, scraping the browned bits from the bottom of the pan.

    Cook the Rouladen

    Return the rouladen to the skillet, cover, and reduce heat to low. Simmer for 1.5-2 hours, until the beef is tender.

Pickled Red Cabbage

    Combine Ingredients

    In a large bowl, mix shredded red cabbage, vinegar, sugar, salt, and caraway seeds.

    Pickle the Cabbage

    Let the mixture sit for at least 1 hour at room temperature, or refrigerate for up to 24 hours for a more intense flavor.

Red Potatoes Preparation

    Cook the Potatoes

    In a pot, place quartered red potatoes and cover with water. Add salt and bring to a boil. Cook for about 15-20 minutes until tender. Drain and set aside.

    Combine and Serve

    In a bowl, mix cooked potatoes with butter, black pepper, and chopped scallions. Serve topped with shredded Muenster cheese and bacon jam.
