Rouladen Preparation

Prepare the Beef
Lay the beef flank steak flat on a clean surface. Use a meat mallet to pound it to about 1/4-inch thickness.

Sear the Rouladen
In a large skillet, heat olive oil over medium-high heat. Once hot, add the rouladen and sear on all sides until browned. Remove and set aside.

Cook the Rouladen
Return the rouladen to the skillet, cover, and reduce heat to low. Simmer for 1.5-2 hours, until the beef is tender.
Pickled Red Cabbage

Combine Ingredients
In a large bowl, mix shredded red cabbage, vinegar, sugar, salt, and caraway seeds.

Pickle the Cabbage
Let the mixture sit for at least 1 hour at room temperature, or refrigerate for up to 24 hours for a more intense flavor.
