Preparation

    Prepare the Ingredients

    Gather all ingredients. If making a Rachel, substitute turkey for corned beef.

    Heat the Sauerkraut

    In a small saucepan over medium heat, warm the sauerkraut for about 3-5 minutes until heated through. Drain excess liquid if necessary.

Assemble the Sandwich

    Spread Dressing

    Spread 1 tablespoon of Thousand Island dressing on one side of each slice of marbled rye bread.

    Layer the Ingredients

    On one slice of bread (dressing side up), layer the corned beef (or turkey), sauerkraut, and Swiss cheese. Top with the second slice of bread (dressing side down).

Cooking

    Grill the Sandwich

    In a skillet over medium heat, melt the butter. Place the sandwich in the skillet and cook for about 4-5 minutes on one side until golden brown.

    Flip and Finish Cooking

    Carefully flip the sandwich and cook for another 4-5 minutes on the other side, until the cheese is melted and the bread is golden brown.

Serving

    Slice and Serve

    Remove the sandwich from the skillet, slice in half, and serve immediately with extra Thousand Island dressing on the side if desired.
