Prepare the Pork
Pound the pork loin to about 1/2 inch thickness. Season both sides with salt and black pepper.

Bread the Pork
Set up a breading station with three shallow dishes. Place flour in the first dish, beaten eggs in the second, and breadcrumbs in the third. Dredge each piece of pork in flour, dip into the eggs, and coat with breadcrumbs.

Fry the Pork
In a large skillet, heat the vegetable oil over medium-high heat. Fry the breaded pork for about 4-5 minutes per side or until golden brown and cooked through. Remove and keep warm.

Make the Gravy
Pour in the beef broth and bring to a simmer. Stir in the heavy cream and Dijon mustard. Cook until the gravy thickens slightly. Stir in chopped parsley before serving.

Prepare the Pickling Mixture
In a bowl, combine apple cider vinegar, sugar, and salt. Stir until dissolved.

Add the shredded red cabbage to the vinegar mixture. Toss well and let sit for at least 30 minutes before serving.
