For the Chicken Schnitzel

Prepare the Chicken
Place chicken breasts between two sheets of plastic wrap and pound them to about 1/2 inch thick.

Set Up Breading Station
In three separate shallow dishes, place flour in the first, beaten eggs in the second, and breadcrumbs mixed with salt and pepper in the third.

Bread the Chicken
Coat each chicken breast first in flour, then dip in egg, and finally coat with breadcrumbs. Press the breadcrumbs onto the chicken to ensure they stick.

Fry the Chicken
In a large skillet, heat vegetable oil over medium-high heat. Once hot, add breaded chicken pieces and cook for 4-5 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Make the Gravy
Sprinkle flour over the sautéed vegetables and stir to combine. Gradually whisk in chicken broth and soy sauce. Cook until the mixture thickens, stirring frequently. Season with salt and pepper.

Pickle the Cabbage
In a bowl, combine sliced red cabbage, apple cider vinegar, sugar, and salt. Mix well and let sit for at least 30 minutes to pickle.
