    Prepare the Chicken

    Preheat your grill or heat a skillet over medium-high heat. Rub the chicken breasts with olive oil, then season them generously with salt, black pepper, and garlic powder.

    Place the chicken breasts on the grill or skillet and cook for 6-7 minutes on each side until fully cooked and the internal temperature reaches 165°F (75°C). If you prefer crispy chicken, you can also bread and fry the chicken instead.

    Add Buffalo Sauce

    Once the chicken is cooked, toss it in buffalo sauce until it is well coated.

    Melt the Cheese

    Top each piece of chicken with two slices of pepper jack cheese, cover, and cook for an additional 1-2 minutes until the cheese is melted.

Sandwich Assembly

    Prepare the Buns

    While the chicken is cooking, slice the buns in half and toast them lightly if desired.

    Assemble the Sandwich

    On the bottom half of each bun, layer a generous amount of lettuce, followed by the sliced tomato, red onion, pickles, and the buffalo chicken topped with melted cheese.

    Finally, add pickled jalapenos to taste for extra spice, then place the top half of the bun on each sandwich.
