Method
Pretzel Sticks

Prepare the Dough
In a mixing bowl, combine warm water, sugar, and yeast. Let it sit for 5-10 minutes until frothy. Add flour and salt, and mix until a dough forms.

Knead the Dough
Knead the dough on a floured surface for about 5-7 minutes until smooth. Place in a greased bowl, cover, and let rise for 1 hour.

Shape the Pretzels
Preheat the oven to 425°F (220°C). After the dough has risen, divide it into 8 pieces and roll each piece into a long rope. Twist into a pretzel shape.

Baking Soda Bath
In a pot, bring 10 cups of water and baking soda to a boil. Boil each pretzel for about 30 seconds, then place on a baking sheet lined with parchment paper.

Bake
Sprinkle coarse sea salt on top of the pretzels. Bake in the preheated oven for 12-15 minutes or until golden brown.

Assemble the Rolls
Lay out the flank steak and spread a thin layer of Dijon mustard on each piece. Place bacon, pickles, and sautéed onions on top.

Roll and Secure
Tightly roll the flank steak and secure with toothpicks. Season with salt and black pepper.

Cook the Rouladen
In a skillet, brown the rouladen on all sides. Add beef broth, cover, and simmer for about 1.5 hours until tender.
Sauerkraut Balls

Prepare the Mixture
In a mixing bowl, combine sauerkraut, cream cheese, chopped green onions, egg, salt, and black pepper.

Form the Balls
Shape the mixture into balls about 1 inch in diameter. Roll each ball in bread crumbs until fully coated.

Fry the Balls
In a deep frying pan, heat oil to 350°F (175°C). Fry the balls in batches until golden brown, about 3-4 minutes each. Drain on paper towels.

Coat the Cheese Curds
Dip each cheese curd first in flour, then in the egg mixture, and finally coat in bread crumbs.

In a deep frying pan, heat oil to 350°F (175°C). Fry the cheese curds until golden brown, about 2-3 minutes. Drain on paper towels.

Make the Beer Cheese Dip
In a bowl, blend cream cheese, shredded cheddar cheese, beer, garlic powder, onion powder, salt, and black pepper until smooth.

Transfer the mixture to a small saucepan and heat over low until warmed through. Serve alongside the pretzel sticks.
