Preparing the Chicken

Grill the Chicken
Preheat the grill to medium-high heat. Season the chicken breasts with salt and black pepper. Place the chicken breasts on the grill and cook for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C). Remove from the grill and let rest for 5 minutes before slicing.

Prepare the Salad Base
In a large bowl, combine the mixed greens. Chop the Roma tomatoes into bite-sized pieces and add them to the bowl.

Add Cheese
Sprinkle the shredded cheddar and Jack cheese over the mixed greens and tomatoes.

Slice and Add Chicken
Slice the grilled chicken into strips and arrange them on top of the salad.
Making the Dressing

Prepare the Dressing
In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, honey, salt, and black pepper until well combined.
