Method

Meatloaf Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 180°C (350°F).

  2. 2

    Cook the Bacon and Onion

In a skillet over medium heat, cook the diced bacon until crispy. Add the chopped onion and minced garlic, cooking until the onion is soft and translucent. Remove from heat and let cool slightly.

  3. 3

    Mix the Meatloaf Ingredients

In a large mixing bowl, combine the ground beef, ground pork, diced black forest ham, cooked bacon and onion mixture, eggs, bread crumbs, salt, black pepper, and dried thyme. Mix until well combined, but do not overmix.

  4. 4

    Shape the Meatloaf

Transfer the mixture to a loaf pan and shape it into a loaf. Smooth the top with a spatula.

Glazing and Baking

  1. 5

    Prepare the Glaze

In a small bowl, mix together the German mustard, brown sugar, and Haus-curry sauce until smooth.

  2. 6

    Apply the Glaze

Spread the glaze evenly over the top of the meatloaf.

  3. 7

    Bake the Meatloaf

Place the meatloaf in the preheated oven and bake for 60-70 minutes, or until the internal temperature reaches 75°C (165°F).

  4. 8

    Rest the Meatloaf

Once done, remove the meatloaf from the oven and let it rest for 10 minutes before slicing.

Mashed Potatoes and Serving

  1. 9

    Prepare the Mashed Potatoes

While the meatloaf is baking, boil the chopped potatoes in a large pot of salted water until tender, about 15-20 minutes. Drain the potatoes.

  2. 10

    Mash the Potatoes

Add the butter and milk to the drained potatoes and mash until smooth. Season with salt and pepper to taste.

  3. 11

    Serve

Slice the meatloaf and serve it warm alongside a generous serving of mashed potatoes and pickled red cabbage.
