Prepare Chicken

Grill or Fry Chicken
If using grilled chicken, preheat the grill to medium-high heat. Brush the chicken breasts with olive oil and season with salt and black pepper. Grill for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). For crispy chicken, heat oil in a skillet and fry the chicken breasts until golden brown and cooked through, about 5-6 minutes per side.

Cool and Slice Chicken
Once cooked, remove the chicken from the heat and let it rest for a few minutes. Slice the chicken into strips or bite-sized pieces.

Assemble Salad
In a large salad bowl, combine the mixed greens, chopped tomatoes, sliced cucumber, and red onion. Toss gently to mix.

Add Cheese
Sprinkle the shredded Cheddar Jack cheese over the top of the salad.
Final Assembly

Combine Chicken and Salad
Place the sliced grilled or crispy chicken on top of the assembled salad.

Drizzle with ranch dressing or balsamic vinaigrette as desired. Toss gently to combine or serve dressing on the side.
