Cheese Curds Preparation

Coat the Cheese Curds
Begin by setting up a breading station. Place the flour in one shallow dish, beaten eggs in another shallow dish, and breadcrumbs mixed with salt and pepper in a third dish.

Bread the Curds
Take each mozzarella cheese curd and first coat it in flour, shaking off the excess. Then dip it in the beaten eggs, allowing the excess to drip off, and finally coat it in the breadcrumb mixture. Repeat until all curds are breaded.

Heat the Oil
In a deep frying pan or pot, heat the oil over medium-high heat until it reaches 350°F (175°C). You can test if the oil is ready by dropping a small piece of bread into it; if it sizzles and turns golden brown, it's ready.

Sauce Preparation

Make the Haus Ranch Sauce
In a mixing bowl, combine mayonnaise, buttermilk, chopped dill pickles, garlic powder, and paprika. Mix well until smooth and set aside.

Make the Haus Curry Sauce
In another bowl, mix together mayonnaise, curry powder, honey, and a splash of water if desired for consistency. Adjust seasoning to taste.
