Pork Schnitzel

Prepare the Pork
Slice the pork loin into 1/2 inch thick pieces. Tenderize using a meat mallet until evenly flattened.

Fry the Schnitzel
Heat olive oil in a large skillet over medium-high heat. Fry the breaded pork schnitzel for about 3-4 minutes on each side until golden brown. Drain on paper towels.

Add Milk
Slowly whisk in the milk, ensuring there are no lumps. Continue to cook until the sauce thickens, about 5 minutes.

Add Cheese and Seasoning
Remove from heat and stir in shredded cheese, salt, and pepper until the cheese is melted and smooth.

Cook Spaetzle
Bring a pot of salted water to a boil. Use a spaetzle maker or a colander to drop small amounts of batter into the boiling water. Cook until they float, about 2-3 minutes. Remove with a slotted spoon and drain.
