Black Bean Veggie Burger Recipe

Prepare the Burger Patty

Mash the Black Beans
In a large bowl, mash the black beans with a fork or potato masher until mostly smooth but still slightly chunky.

Mix Ingredients
Add the roasted corn, smoked bell peppers, breadcrumbs, garlic powder, cumin, salt, black pepper, olive oil, and egg to the mashed black beans. Mix until well combined.

Form Patties
Divide the mixture into four equal portions and shape them into patties.

Chill Patties
Place the patties on a plate and refrigerate for at least 30 minutes to firm up.
Cook the Patties

Heat Olive Oil
In a large skillet, heat a tablespoon of olive oil over medium heat.

Cook Patties
Add the chilled patties to the skillet and cook for 5-6 minutes on each side or until golden brown and heated through.

Melt Cheese
During the last minute of cooking, place a slice of Muenster cheese on each patty, cover the skillet, and allow the cheese to melt.
Assemble the Burger

Prepare Buns
Toast the burger buns lightly if desired.

On the bottom half of each bun, place a lettuce leaf, then a cooked patty topped with melted cheese, and a generous drizzle of spicy aioli.

Place the top half of the bun over the assembled burger and serve immediately.
