Method
Prepare the Burger Mixture
- 1
Drain and Rinse Black Beans
Open the can of black beans and drain the liquid. Rinse the beans under cold water and set aside.
- 2
Combine Ingredients
In a large mixing bowl, combine the drained black beans, roasted corn, chopped smoked red peppers, garlic powder, cumin, chili powder, salt, black pepper, breadcrumbs, and the egg.
- 3
Mash and Mix
Using a fork or potato masher, mash the mixture until well combined but still slightly chunky.
- 4
Form Patties
Divide the mixture into 4 equal portions and form each portion into a patty.
Cook the Burgers
- 5
Heat the Pan
Heat a non-stick skillet or grill pan over medium heat. You may add a little oil to prevent sticking.
- 6
Cook Patties
Place the patties in the pan and cook for 5-7 minutes on each side, or until they are golden brown and heated through.
- 7
Add Cheese
In the last minute of cooking, place a slice of Muenster cheese on each patty and cover the pan to melt the cheese.
Assemble the Burgers
- 8
Prepare Buns
Toast the burger buns lightly if desired.
- 9
Layer Ingredients
On the bottom half of each bun, place a lettuce leaf, then a cooked burger patty topped with melted cheese, and drizzle with spicy aioli.
- 10
Complete the Burger
Top with the other half of the bun and serve immediately.
