For the Horseradish Cream Cheese

For the Benny

Method

Prepare Horseradish Cream Cheese

1

In a mixing bowl, combine cream cheese, prepared horseradish, lemon juice, chopped dill, salt, and black pepper. Mix until smooth and thoroughly combined. Set aside in the refrigerator until ready to use.

Prepare Benny

2

Toast the English Muffins

Slice the English muffins in half and toast them until golden brown.

3

Poach the Eggs

Fill a large pot with water, add white vinegar, and bring to a gentle simmer. Crack each egg into a small bowl, then gently slide them into the simmering water. Poach for about 3-4 minutes, or until the whites are set and the yolks are still runny.

4

Crisp the Capers

In a small skillet, heat olive oil over medium heat. Add capers and cook until they are crispy, about 2-3 minutes. Remove from heat.

5

Assemble the Dish

Spread a generous amount of horseradish cream cheese on each toasted English muffin half. Top with smoked salmon, a poached egg, and sprinkle with crispy capers. Serve immediately.
