    Rinse the fresh Pemaquid oysters under cold running water to remove any grit or sand. Place the cleaned oysters in a shallow dish.

    Make the Brine

    In a small bowl, combine sea salt with 1 cup of cold water to create a brine. Stir until the salt is fully dissolved.

    Soak the Oysters

    Pour the brine over the cleaned oysters, ensuring they are completely submerged. Let them soak for 30 minutes for optimal flavor.

    Prepare the Garlic and Parsley

    Mince the garlic cloves and chop the fresh parsley finely. Set aside.

    Cook the Oysters

    In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant. Carefully add the soaked oysters to the skillet, including some of the brine.

    Add Seasoning

    Sprinkle black pepper and hot sauce over the oysters. Cook for about 5-7 minutes, or until the oysters are plump and cooked through.
